Truzzel wasn't built in a vacuum. It was built inside Blue Gourmet USA — a wholesale artisan bakery in Dallas, TX — to solve real compliance, traceability, and operations problems that no existing software handled well enough.

We needed it. So we built it.

Blue Gourmet USA is a wholesale artisan bakery in Dallas that supplies hotels, restaurants, and catering companies across DFW. Every day, ingredients arrive from suppliers. Every day, those ingredients become finished products. Every day, those products ship to customers that expect full traceability, consistent quality, and audit-ready documentation.

For years, the operation ran on paper. Handwritten batch sheets. Lot codes scrawled on sticky notes. COAs filed in binders — when they weren't lost entirely. QuickBooks handled invoicing and payroll. Everything else was memory, phone calls, and hope.

"The day before an SQF audit, I was pulling lot codes from paper binders, cross-referencing supplier invoices, and trying to prove which flour went into which batch of sourdough. It took hours. I knew there had to be a better way."

So we built Truzzel. We started with the problem we knew best — receiving. A bag of flour arrives. Instead of typing the lot code, quantity, and expiration into a spreadsheet, you snap a photo. AI reads the label. The receiving record creates itself. The COA gets extracted and linked. A missing COA gets flagged as an exception. That was the first feature. Everything else grew from there.

Today, Truzzel handles the full lifecycle: receive → produce → label → store → ship. Every lot traced. Every document captured. Every gap detected. Blue Gourmet is still the proving ground — every feature runs in production before it ships to customers.

Built by the operator who needed it

I'm Jeremiah Parten, General Manager of Blue Gourmet USA, an artisan bread manufacturer in Dallas. I run everything outside of actual baking: finance, accounting, sales, compliance, deliveries, and the operational handoffs that make a food plant work.

I built Truzzel because we needed inventory management software and the alternatives forced a brutal trade-off: buy expensive software that still didn't cover everything we needed, or hire a dedicated compliance and paperwork person we couldn't afford. Worse, every option I evaluated was behind on AI. There were basic automations and minor features, but nothing close to the AI-first capture and agent-native architecture a 2026 food manufacturer actually needs.

So I built the system I wanted on the floor: evidence first, operator friendly, and designed for the way modern AI can actually reduce work instead of adding another dashboard.
